Potato Pizza


So you want to have a pizza but you don’t want all the sodium, calories, chemicals?  Okay………..do you like to cook?  Hopefully the answer is yes…………


Well then, how about making a pizza but using POTATOES for the crust?  Sounds crazy but it can be done…….here is how: 


Take 1-1/2 pounds of clean, scrubbed & washed white potatoes and grate them into a large bowl filled with cold water (this prevents browning)


Line a separate baking sheet with parchment paper or lightly mist with cooking spray. Working with 1 handful at a time, squeeze excess water from potatoes and place on a clean kitchen towel. Roll up towel; bend and wring any remaining moisture from potatoes. Spread potatoes on baking sheet, or pizza circle, creating a layer about 1/8-inch thick. Bake at 375°F for 20 minutes.   Now comes the fun part—the toppings…….. 


Hmmmmm….feta, spinach, bleu cheese, pineapple, walnuts,  bacon, peppers, mushrooms---soo many delicious choices---- create your own delectable masterpiece and when ready, finish it off in the oven for another 15-20 minutes just till golden brown, bubbly and smelling ohhh sooo delicious………….  Enjoy my friends!!!

Pineapple Salsa


1 c. fine chopped fresh pineapple                             1/4 c. chopped red onions
1/2 c. diced red  pepper                                          2 green chile peppers, chopped
1/2 c. diced green pepper                                        1/4 c. orange juice
1 c. frozen corn , thawed                                         1/4 c. fresh cilantro, chopped
1 - 15 oz can black beans, rinsed                                              1/2 t. ground cumin
salt & pepper to taste

In large bowl, toss together pineapple. peppers, corn, beans, onionis chile peppers, oj anc cilantro.  Season with cumin, salt and pepper. Chill, taste, adjust seasoning and serve
